Bacon and Sausage-Stuffed Potato Loaf Recipe

Ingredients:
4 large russet potatoes, peeled and chopped into cubes
1/2 lb bacon, chopped
1/2 lb breakfast or Italian sausage, crumbled
1 small onion, finely diced
1 cup shredded cheddar cheese
1/4 cup sour cream
2 tablespoons butter
1/4 cup milk
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (for garnish)
1/2 cup breadcrumbs (optional, for topping)

Directions:
Cook the Potatoes:

Bring a large pot of salted water to a boil. Add the cubed potatoes and cook for 10-12 minutes, or until tender when pierced with a fork.
Drain the potatoes and return them to the pot. Mash them until smooth.
Cook the Bacon and Sausage:

In a skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Transfer to paper towels to drain, leaving some of the bacon fat in the pan.

In the same pan, crumble and cook the sausage along with the chopped onion until the sausage is browned and the onion is soft, about 7-8 minutes. Remove from the heat.

Prepare the Mashed Potatoes:

Add butter, sour cream, and milk to the mashed potatoes, stirring until smooth and creamy. Season with salt and pepper to taste.
Stir in the cooked bacon, sausage, onion, and shredded cheddar cheese.
Assemble the Loaf:

Preheat the oven to 375°F (190°C).
Grease a loaf pan (or a similar-sized baking dish) and transfer the mashed potato mixture into it. Press it down to pack it in evenly.

Optional Topping:

For a crispy top, sprinkle breadcrumbs evenly on top of the potatoes.
Bake:

Place the loaf pan in the oven and bake for 20-25 minutes, or until the top is golden brown and the dish is heated through.

Garnish and Serve:

Let the dish cool for a few minutes, then sprinkle with fresh parsley for a burst of color.
